Cooking Challenge Week 7: Taco Chicken Salad

Picnics are a great way to get out and enjoy the beautiful summer weather. Whether at the beach, a park or your backyard, picnic meals can be fun for the whole family. And it's a great chance to get creative with what you eat. So when I started thinking about a new dish I could make for my own picnic, I turned to a dish I make often for lunch, chicken salad. Normally, it's just chopped chicken, mayo and a little Dijon mustard. But for my picnic dish, I decided to spice it up a bit and add a big crunch factor. Here are the ingredients you'll need to make my Taco Chicken Salad (for two oversized sandwiches):
2 cups rotisserie chicken, chopped
1/4 cup mayo
1/4 cup black beans, rinsed
2 strips bacon, cooked and crumbled
1/2 tbsp taco seasoning
1/2 lime
Hot sauce
1/2 cup corn chips
2 soft sandwich buns
